These sautéed collard greens are a simple yet flavorful side dish that’s both nutritious and satisfying. Bright green, tender greens are seasoned with salt and balsamic vinegar, creating a delicious balance of savory and tangy flavors. Topped with sweet dried tart cherries and optional roasted almonds, this dish makes for the perfect complement to any meal.
Ingredients:
- 1 bunch collard greens
- fine salt, to taste
- 1 tablespoon balsamic vinegar
- 1–2 tablespoons dried tart cherries (unsweetened)
- optional: chopped roasted almonds
Instructions:
- Wash and dry the collard greens, then remove the stems. Stack the leaves.
- Heat up a large, shallow saucepan or skillet over medium heat.
- Roll up the stack of greens, and slice crosswise into 1⁄2- to 3⁄4-inch wide ribbons.
- Cook the greens until bright green and tender, just a few minutes, stirring occasionally. You may cover them briefly with a lid to help steam them, but this is not necessary.
- Turn off the heat, season with salt, and dress with the balsamic. Serve immediately and top with dried tart cherries and optional chopped almonds.
