These sautéed collard greens are a simple yet flavorful side dish that’s both nutritious and satisfying. Bright green, tender greens are seasoned with salt and balsamic vinegar, creating a delicious balance of savory and tangy flavors. Topped with sweet dried tart cherries and optional roasted almonds, this dish makes for the perfect complement to any meal.

Ingredients: 

  • 1 bunch collard greens
  • fine salt, to taste
  • 1 tablespoon balsamic vinegar
  • 1–2 tablespoons dried tart cherries (unsweetened)
  • optional: chopped roasted almonds

Instructions: 

  1. Wash and dry the collard greens, then remove the stems. Stack the leaves.
  2. Heat up a large, shallow saucepan or skillet over medium heat. 
  3. Roll up the stack of greens, and slice crosswise into 1⁄2- to 3⁄4-inch wide ribbons. 
  4. Cook the greens until bright green and tender, just a few minutes, stirring occasionally. You may cover them briefly with a lid to help steam them, but this is not necessary.
  5. Turn off the heat, season with salt, and dress with the balsamic. Serve immediately and top with dried tart cherries and optional chopped almonds.
